🌿 What Is Hummingbird Cake?
Traditionally, hummingbird cake is a Southern dessert made with:

🧁 Paleo Hummingbird Muffin Recipe
Ingredients
Wet:
2 ripe bananas, mashed
½ cup crushed pineapple (drained well)
3 eggs
¼ cup melted coconut oil or avocado oil
2 tbsp pure maple syrup or raw honey
1 tsp vanilla extract
Dry:
1 ¾ cups almond flour
¼ cup coconut flour
1 tsp baking soda
½ tsp baking powder
1 tsp cinnamon
¼ tsp sea salt
Optional Add-Ins:
¼ cup chopped pecans
¼ cup unsweetened shredded coconut
Instructions
Preheat oven to 350°F.
Line a muffin tin with parchment liners.
Mix wet ingredients in one bowl.
In a separate bowl, combine dry ingredients.
Fold dry into wet until just combined.
Stir in pecans or coconut if using.
Scoop into muffin tin (fills about 9–10 muffins).
Bake 22–26 minutes until golden and set.
Let cool completely before removing from pan.
